Tonight I made dinner for my boyfriend and my mom. It was from a recipe I got from some girls I go to school with. I had it once and really liked it. I made it again tonight and I loved it this time as well. From the 3 people that ate it, myself included, it received a big 3 THUMBS UP! I thought I might pass along the recipe to anyone looking to make something cheap, fast, and delicious!
1lb Chorizo (pork or beef)
1tbsp chopped garlic
2c cooked pinto beans
1/2tsp chili powder
1/4tsp salt
Tortilla chips
3 cups cheese (cheddar or pepper-jack)(grated)
1/2 of one small, white onion (cut into thin rings)
Sour cream
1tbsp fresh lime or lemon juice
Chopped cilantro
In a large skillet, cook chorizo and garlic. Stir over med. heat until brown ~ 5 min
Remove meat from skillet and drain meat on a paper towel
In the same skillet with leftover fat, add beans, chili powder, salt and 1/2c water
Cook over medium heat until warmed thoroughly, then mash until smooth and remove.
Preheat the oven to 450degrees
On a large oven platter, spread a layer of chips.
Cover that layer with 1/2 of your beans
Then cover that layer with 1/2 of your chorizo.
Cover the chorizo layer with 1/2 of your grated cheese and top with 1/2 onion rings.
Repeat with another layer of chips, beans, chorizo, cheese, and onions.
Bake for 5-8 minutes and then remove from heat.
Whisk sour cream and lime/lemon juice with a pinch of salt.
Drizzle or nachos and garnish with cilantro.
(My mom added some fresh, diced tomatoes which she enjoyed and you can try if you like)
Serves ~ 4 people
